If you're like me and many people of the world, you probably love Italian food, especially spaghetti. As delicious as it is, spaghetti or pasta is what's known as a refined carbohydrate, which has been stripped of its fiber and other nutrients. This is then what's known as an empty calorie which provides our bodies energy with no nutritional density. These refined empty carbohydrates can actually lead to overeating as they are digested much faster than carbohydrates that still have their fiber and this can lead to an increase in your appetite causing you to eat more. I love taking some of the most classic dishes of certain cuisines such as Italian food & putting my own spin on them recreating a much healthier version that I can enjoy guilt free without compromising the amazing taste they have to offer. My Kinetic Spaghetti Bolognese taste is a 10/10, low carb, & low calorie. I hope you try this recipe & enjoy it guilt free because it has over 5 vegetables in it!
Ingredients:
- 2lb of ground beef ( you can substitute for a leaner ground turkey or even make this dish vegetarian with vegetarian meat crumbles subsitute)
- 1 white onion
- 1 zucchini
- 5 cloves of garlic
- 1 cup of frozen peas
- 1 cup of frozen carrots
- 1 28oz can of Italian crushed tomatoes ( make sure all ingredients have no added sugar)
- Fresh basil
- 1 large spaghetti squash
Recipe:
Brown 2lb of ground meat in a large skillet (make sure to drain any excess grease)
Chop 1 onion, 1 zucchini, & 5 cloves of garlic
Add vegetables to meat and season with salt & pepper
Cook for 10 min over medium heat
Add 1 28oz can of Italian crushed tomatoes, stir, & add a cover and simmer for 20 minutes
Add the thawed peas and carrots recover and simmer for an additional 10 minutes
Cut in half and bake your spaghetti squash open side down in the oven for 40 minutes at 400 degrees at the same time you start making your Bolognese sauce so they both finish at about the same time
Plate the spaghetti squash and top with however much Bolognese you prefer and top with fresh basil ( Optionally, add Parmesan and Romano cheeses or red pepper flakes if you like your Bolognese spicy) Buon Appetito
